From the Freezer to Service
Marco Pierre White’s Retro Range (@mpw.retro) recently shared a quick clip showing frozen peas going straight from the freezer into hot water and onto the plate in under a minute. Simple, fast, and effective – and a reminder that great cooking doesn’t always mean complicated cooking.
Frozen peas are one of those ingredients that get unfairly dismissed as a lazy option. But the truth is, they’re frozen at their nutritional peak, often retaining more vitamins than fresh peas that have been sitting in transit or on a supermarket shelf for days. Professional kitchens have known this for years. Convenience and quality aren’t mutually exclusive – and this clip is proof of that.
The technique itself couldn’t be simpler. Drop the peas into well-salted boiling water, give them 60–90 seconds, and drain immediately. That’s it. Because they’re already blanched during the freezing process, you’re really just heating them through rather than cooking them from scratch.
That said, the comment section had a fair point – don’t stop there. A knob of butter, a few torn mint leaves, and a proper pinch of salt transforms what could be a bland side into something genuinely worth eating. A little lemon zest or a crack of black pepper goes a long way too. Plain peas straight from the water just don’t cut it, and even a Michelin-starred chef would agree on that.
The broader lesson here is one that Marco Pierre White has always stood behind – respect simple ingredients and treat them properly, even when the method is fast. Speed in the kitchen is a skill, not a shortcut. And when you nail the basics like this, everything else on the plate benefits.
Quick, no-faff cooking done right. That’s the MPW way.
